This was a large cook. We took 11 pounds of ground beef and made eleven loaves of meatloaves. Four loaves were going to family members, and we planned on eating some now and freezing the rest. We love freezing meatloaf in 1 pound chunks because it is the perfect previously cooked food to pull out of the freezer. Cooked frozen meatloaf is a convenient way to have a delicious dinner ready at a moments notice.
We like to substitute pork rinds for bread crumbs in our meatloaf. You can also add bacon, cheese, or anything else. A quick google search will bring up thousands of meatloaf recipes. You can find the recipe we used here.
Combining Ingredients and Preparing Meatloaf
Combine all ingredients in a bowl and mix with your hands. Once you have everything mixed, you can take chunks of beef and start forming it in your loaf pans. In a standard disposable loaf pan it should be about 1 pound per pan.
TIP If you want the most smoke flavor on your meatloaf, cook the meatloaves naked. Form the mixture into a tightly packed loaf. We chose to use the loaf pans because we added a layer of sauce on top with cheese. The pans keep all this goodness contained and also make freezing the meatloaf a breeze. Once they cool down, cover the meatloaf with a foil sheet and throw it in the freezer. You now have food for weeks.
If you choose to leave the meatloaf naked, you can glaze it with the barbecue sauce of your choice the last twenty minutes of the cook. This will give you a sweet, smokey crust on the outside that can’t be beat.
